It’s here! One of my favorite days of the year!
When it comes to celebrating the fifth day of May, everyone knows that enjoying some killer Mexican dishes are a MUST! That is why I have rounded up some of my favorite Cinco de Mayo recipes ever!
And since you can’t truly celebrate the day without a margarita in hand, I have included the best ever homemade margarita recipe for you. You can thank me later! Be sure to drink a couple for me while you’re at it.
Roasted white bean vegan tacos
This delicious recipe comes courtesy of my girl, Laura Doerr from Ways to my Heart. I can’t wait for you to try this amazing taco recipe. It is top notch. And for all of my vegan friends out there, you better believe with a couple small tweaks it can be in your bellies in no time too! It is a frequented recipe in my kitchen that is full of flavor and leaves you feeling fabulous. It’s pretty magical, if I must say.

Vegan Mexican street corn salad
This Vegan Mexican Street Corn Salad is everything you love without the mess! Fresh, grilled corn on the cob (elotes), sliced off the cob (esquites), paired with a cool, creamy, and tangy gluten-free, allergy-free mayo-based sauce with cilantro, lime, and a dash of spice! Can I get a hell yeah?

With no additives or syrups, this homemade margarita recipe is sure to please even the pickiest of health-conscious eaters. Only the best natural nectars make this beauty sing full of flavor. On top of that, my favorite tequila, Casamigos Blanco Tequila, has only 64 calories! When you top it with the natural ingredients, you’re practically drinking free calories of pure joy! No judgement here if you decide to have more than one. It is just that good.
